Waykan are chosen for their pristine example of the dynamic character of coffees from Huehuetenango, with their crisp acidity reminiscent of lemon, grape or apple and flavors of toffee and sweet nuts like almond. In the Maya Q’qnjobal dialect in the region, “waykan” means “star or light that shines in the sky at night.” The indigenous population in and around Huehuetenango plays a large role in the coffee production here and coffee accounts either directly or indirectly for roughly 80% of the local economy.

The coffee is processed from a Salvadoran farm called Finca la Montañita are simply great. Several varieties of coffee tree are grown here and the beans are processed in different ways to ensure a diverse production. José Antonio Aguilar, owner of the farm has dedicated his entire life to growing the coffee tree and is doing his best to ensure that the quality of production is as high as possible. And he's doing well. Coffee tastes of nougat, grapefruit and luscious cocoa.
We find this coffee exceptional as an espresso and milk based coffee.
